… A bölcs öregek csak mosolyogtak, nem csodálkoztak, az ételnek nevet adtak. Rétes lett a neve a finomságnak, amit sütnek attól kezdve télen s nyárba…
Gyermekként nagy csodálattal néztem, ahogy a nagymamáim egy kicsinyke tésztacipóból hatalmas, az egész asztalt beterítô vékony tésztát húztak. Azt mondták úgy jó egy rétestészta, ha alatta az újságok apró betûit is el tudom olvasni. Manapság kevesen vállalkoznak ilyen idôt rabló tevékenységre, pedig higgyék el teljesen más ízvilágba csöppen az, aki megkóstolja az igazi házi rétest.
A rétest szinte mindenki szereti. Talán azért mert a töltelékekben végtelen lehetôségek rejlenek. Mindennel megtölthetô, ezáltal az ízek kiválóan keverhetôek. Vannak, akik a hagyományos ízélményekre esküsznek, az alma, a meggy, a túró, a káposzta vagy a mák megszokott és bevált ízeit keresik, de vannak akik szívesen kalandoznak a kevert ízek világába.
